  1. Your blog is amazing Cori. I’m going on vacation on Friday, so I don’t want to stock up quite yet, but when I come back, I will be basing my shopping list on these recipes here. Thanks so much for sharing your talents with us.

  2. Thank you for sharing you recipes with us đŸ™‚

Could you include which level of Atkins the recipes are appropriate for? Even better would to have them in separate categories.

I want to try the Poblano Chili Rellenos đŸ™‚

    1. I was planning on stating whether a recipe is Induction friendly and will make sure I do that soon. The Poblano Chile Relleno is Induction friendly, just so you know :). Glad you like them!

  3. Cori,
Loving all of these recipes! I bought brussels sprouts (Yes! of my own free will!) for the first time ever & can’t wait to try your recipe out

I got my slow cooker & can’t wait to get going but I am getting very confused by the different advice on the internet. I want to cook a 2.5lb house keepers cut of beef with veg as some sort of roast with gravy as my first attempt.
    Any advice?

    1. In a slow cooker, cook roast for 8-10 hours with veggies, season your roast with whatever seasoning you like before you put it in the slow cooker and you don’t need to add any liquid becasue the beef will put off a lot of yummy juices that you can make into a gravy when it’s done cooking.
