The Ingredients:
14 oz. Zucchini, shredded (2 medium)
2 Eggs, large, whisked very well
2 Tbsp. Coconut Flour
1/2 tsp. Baking Soda
1/4 tsp. White Pepper
1/2 tsp. Salt
4 Tbsp. Butter for frying
What To Do:
Combine all ingredients, except butter, set batter aside.
Melt butter in non stick saute pan over medium to med-high heat, drop batter by spoonful into hot pan and cook for about 3-4 minutes per side.
Makes 4 servings/8 patties, 2 per serving.

can you use atkins all purpose cooking flour instead of coconut flour….hard to find where i live and need a substitute….?

Those certainly look good! I haven’t tried coconut flour in fritters yet, just CarbQuick. And I’m trying to get away from CQ, so I’ll try these!

I found a connection to this recipe on the Atkins forum this morning – I thought they looked good and I had a zucchini in the fridge. However, I didn’t have any coconut flour (don’t know where to get it either) so used flax seed meal (the golden kind) instead – I’ve just eaten one with a thin slice of cheese for my morning snack and it was very tasty!
Since I only had one zucchini I made a half amount – I counted the net carbs thus – medium zucchini – 3 , 1 egg – 0.6, flax seed meal – 0, butter – trivial amount – I got 7 fritters from this and although the math is obviously not completely precise I’m going to count 0.6 for each fritter – do you agree?

That sounds about right, I use the flaxmeal in the tuna cakes and it thickens up nicely, good substitution in a pinch.
