I found some chicken & Apple sausages the other day at only 3g carbohydrates each. So much goodness!  I sautéed some spinach in bacon grease and scrambled up 3 eggs to pour on top, then when that was all cooked through I topped the eggs with some Rotel & Velveeta cheese sauce (one of my personal favorites for eggs in particular) then plopped a sausage on top.
Oh my goodness!! So good….

Basic is anything BUT basic!

    The thought of a bun-less burger might make some people cringe or just shake their head in confusion and yet it might just make someone eating low carb just to lose weight a little sad to think about going to get fast food with the kids and having to strip down their value meal to nothing but a skimpy burger patty with American cheese. Although I have been in those shoes, this day was not that day!
     One third pound black angus steak burger, grilled to juicy perfection and then I topped it with creamy Harvarti before it hit my plate. A long (LONG) way from sad meals at fast food joints, this burger got loaded with all the fixings.  The best part? No bun to hide the wonderful flavors. Thin sliced onions and avocados, ripe Roma tomatoes, sugar free sweet gherkins, stone ground mustard, mayo and reduced Sugar ketchup, fresh romaine, oh MY!
     Yes, bun-less is actually better. Not only am I combating the line of diabetes in my family amongst the women but I get to shed some weight in the process. What a wonderful thing indeed.

Morning fuel

I really do enjoy a well rounded breakfast. Here we have 3 scrambled eggs with dill & chives topped with sharp cheddar, a couple pork sausage patties and some full fat Greek yogurt with a handful of smashed berries and some roasted pepitas (pumpkin seeds).
   This is so tasty and with this spread who could possible miss the potatoes or toast? So satisfied that anymore would be too much!

My Routine

     Breakfast was never a part of my daily life before low carb. I ran on coffee and sheer exhaustion for most of the first half of my day. “They” say it throws my body into starvation mode and I would hold onto everything I cram into it when I finally would stop long enough to shovel some fast food deep fried garbage down my gullet. I say “they” because good lord, have you tried to Google healthy eating lately? The results would give even Jillian Michaels a brain injury just trying to weed through it all. Seems like everyone is an expert nowadays.
     I don’t know about all that, but I do know that I feel better when I don’t drink as much coffee and eat some eggs instead. Go figure! So, eat up guys and dolls. Your body will thank you.

Bulletproof Coffee, where have you been all my life?

Oh.my.goodness!
A friend of mine posted a link to bulletproof coffee yesterday so I tried it last night. Can I just die and go to heaven now? How did I miss trying this before now? As a low carber and a coffee addict, I couldn’t give up my sissy creamers…until now, that is. With this kind of flavor, I no longer need all that artifical flavors & sugars! Thank God!

Low Carb is Most Definitely Not Deprivation

Sitting down to dinner with my family and I glance over at the spread before me and am compelled to snap a pic and tell you all about it. So many people make snide comments about low carb (not to me. No one makes snide comments to me). All someone needs to do is take a look at this perfectly balanced low carb meal and realize that this way of eating is perfect in every way. One protein portion, 2 vegetable portions. How could that possibly be unhealthy?
    Crockpot roast beef, steamed asparagus and loaded baked cauliflower. This meal rivals any restaurant fare and takes the figurative cake, by a landslide. So next time someone says a word to you about how unhealthy low carb is… smile and nod. Anyone who argues with an idiot is a fool themselves. I’m preventing diabetes. My mother and grandmother both have it. I am taking the steps needed now, at 40, so I am not facing that diagnosis myself. Rock on with your bad selves and eat low carb!

Oh Bacon…

     How I love thee…. versatile, tasty bacon. The one ingredient that can be added to almost anything and it will improve the dish. Oh yes. Bacon.
   Pretty much everyone except vegans (and some religions) loves bacon! As a low carber, bacon is the holy grail. Not only does this salty little gift from the gods taste like a slice of heaven, you get this:

Bacon grease! Not only is this the best thing to cook eggs in, it’s also a killer ingredient in low carb baked goods. My favorite one included; bacon cheddar scones.
     So, next time you’re at the grocery store, don’t forget the bacon.

Spicy Bacon & Gorgonzola Turkey Meatballs drizzled with Sriracha Mayo on a bed of Fresh Arugula

This was A-Mazing. Do not omit any ingredients… they all work together in such harmony it’s a palate symphony. I will absolutley make this a staple on my dinner table.

Spicy Bacon & Gorgonzola Turkey Meatballs

Ingredients

Directions

  1. Combine everything (except the arugula, bacon & Sriracha Mayo) and shape into 10 meatballs, place into a shallow baking dish lined with foil and parchment (for easy clean up and so the meatballs release easily from pan).
  2. Bake in a 375 degree oven for 30 minutes.
  3. While meatballs are cooking, slice bacon into small pieces and fry into bacon bits until crispy and browned, drain grease.
  4. To serve, make a bed of about 1 1/4 c. arugula and place 2 meatballs on top, drizzle the meatballs with about 1 Tbsp of Sriracha Mayo and top with approx 2 slices worth of bacon bits. This makes 10 meatballs, 2 meatballs per serving with 3.04 Net Carbs per serving with 1.73 coming from veggies.

Sunday breakfast

This morning I made a tasty open faced breakfast sandwich and if I would have thought it out better (my tummy was grumbly) I would have made some hollandaise and this would be a perfect eggs Benedict mock up.
I took a piece of my Italian cheese bread and sliced it in half, buttered both sides and grilled it in a pan until browned. Then I topped it with some deli meat and sliced cheese and broiled it until melted and bubbly. While it was broiling I fried up egg and threw that on top after it was done in the oven. Pretty darn good and very filling.
